    In celebration of Pancake Tuesday, here’s a recipe that I often use to make a healthier version of your typical white flour pancakes.
    Please note that this recipe turns out differently for me every time I make it and I often call them Oat Cakes. I tend to eyeball a lot of my recipes and use different ingredients every time. I have indicated different ideas/options in the recipe 🙂
    I do top these with natural peanut butter and/or sugar free jam rather than maple syrup.
    Here’s to Pancake Tuesday and to having FUN in the kitchen:-)

    1 egg beaten
    1/4c of old fashioned oats (add a bit more if mixture is too runny)
    1/2 scoop of protein powder
    1 small container of yogourt (buy in a pack of 8 or 16) or a couple dallops of yogourt from a container. If you use greek yogourt= more protein. Experiment with different fruit flavoured yogourts if you like! Substitute for cottage cheese or unsweetened applesauce:-)

    Makes 1 serving.  (Although you may be too full to eat all of them…)

    And that’s that… very simple, easy ingredients.

    Like I mentioned, play around with the ingredients and see what you like best.  Top with natural peanut butter and/or sugar free (or less sugar) jam.

    You may find these a little more dense (but sometimes a little flatter and runnier) and drier than a regular pancake but I can assure you they will keep you much more FULL than your regular pancake as they’re packed with protein!!!
