  • It’s Easy Being Green! – Challenge #4

    You should be well on your way to making some great changes in your eating habits!  YAY you!!

    On to Challenge #4…

    You need to eat one BIG salad every single day 🙂

    Already a simple task but, I’ll make it even easier for you… if you don’t feel like salad, then have a whole bunch of broccoli, green beans and/or some other green vegetable- preferably raw.  (I’m so easy on you.. ok, ok.. you can cook them sometimes too.)

    Again, a very easy Challenge!  I first got this idea from Brendan Brazier the author of The Thrive Diet and maker of Vega products.  He was very adamant that if there was ONE change to make in our eating habits that this was IT! 

    So, let’s listen to Brendan and eat our leafy greens…. don’t be shy!

    Hi Sara,

    I think alot of people think going green is boring and not very filling. I have learned to dress my lettuce or spinich with many vegatables and fruit such as mangoes, blueberries and so much more. You would be so surpised how your plain salad has just become so tasteful. My advice would be ” don’t be afraid, try something new.” also you will be so surprised as to how filling it can be. Enjoy !!!!

      Thanks for your comment Kathy! I would love to hear some recipes that you may have in that brain of yours 🙂 I willl be posting another blog with some of my favourite salad recipes too!!

    I’ve got no problem with salads but I’m wondering if anyone can offer an acceptable alternative to salad dressing which isn’t oil and vinegar.

      Hmmm… good question Michelle!! What is it that you like when it comes to dressings? Don’t like oil and vinegar I assume? I will look into this for you… first thought is yogourt or even cottage cheese based dressings.

        I don’t like cottage cheese. I love ranch, cesar, but at the same time I like vinaigrettes. I just find that the oil and vinegar thing gets old fast.

          Hi Michelle
          If you splurge a little and buy extra virgin olive that is pressed and bottled at a vinyard in Italy you will be amazed at the difference in taste. I rarely add vinegar these days because it is so good!

          Love Joan’s idea of getting a better olive oil! I would also suggest getting a low calorie creamy dressing that you like Michelle. I personally LOVE the Renee’s dressing line and find that as long as you MEASURE just a tbsp of dressing, you get lots of great flavour with very little calories. Dressings can be hard because if chosen incorrectly, your healthy salad has just become a calorie laden meal. SOOOO, read your labels and I’m SURE you’ll make a GREAT choice!!

    Taboule is a great alternative. If you get a good one, like Fontaine Sante, it’s got a great flavour and adds some kick without a dressing. Or, balsamic or rice vinegar instead of plain white vinegar, is also a nice change.

      Hey Melody! Do you put the Taboule (tabouli, tabouleh) right onto your leafy greens?? MMMMMM…that sounds awesome:-)

    This s a great idea and has been quite easy for me this week! Just finished a huge salad with baby spinach, snow peas (which are surprisingly sweet) bean sprouts, celery, zucchini , shredded carrot, a few almonds, some fried egg whites and a sliced strawberry or two! It was delicious! I didn’t even need a dressing! P.S I love the idea of putting fruit in a salad to get the contrast…my favourite is watermelon..the contrast is amazing! No judging until you try it!!

    My update:

    I ate a salad most days last week, but i must admit some came from a bag and some I made from ‘scratch’ i found that with avocado, fruit or sunflower seeds I was less tempted to use salad dressing even if I had some with me. I think having a salad a day will be something that I can keep up with.
