This past weekend I wanted to make Chicken Fajitas that could double up as a salad topping or a stir fry on rice but besides chicken I really didn’t have any other ingredients to make a stir fry so, I decided to be creative and of course, not complicated with what I had in my kitchen!!
Follow the Super Simple Recipe below for an easy family favourite!
1c of salsa or more to taste
Chicken Breasts cut into small chunks
1/4 of an onion chopped
Black pepper to taste
1 red and 1 green pepper cut into chunks
Any other veggies you like in a stir fry
Spray wok with olive oil spray (I use a Pampered Chef Kitchen Spritzer)
Fry up chicken with 1/2 of the salsa, the onion and black pepper.
Once it’s cooked through, add the rest of the salsa and the veggies
VOILA!
Put on top of leafy greens, with some lite sour cream or on top of brown rice. For fajitas, add mixture to a tortilla shell with some lite sour cream (substitute cottage cheese or greek yogourt if you prefer and to make it healthier!) and a sprinkle of cheese.
